Recipe Ingredients for Hungarian Mushroom Soup

3/4 cup raw cashews
1/2 cup water
1 tablespoon lemon juice
1 onion
560 g mushrooms
2 cups water
1/2 tablespoon Vegetable Broth Powder
1 tablespoon lemon juice
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon dill
2 tablespoons paprika

Recipe Directions for Hungarian Mushroom Soup

  1. the night before: Combine cashews, water and lemon juice in blender to make "sour cream." (can also let cashews soak in water overnight and blend in the morning). Set aside in fridge.

  2. You can also steam saute the onions, adding the mushrooms until water begins too cook off 'shrooms then night before.

  3. In the morning, put everything except the cashew cream in the crock pot. Cook for 6 hours on low. Stir in "cream" right before dishing out. yum!
