Recipe Ingredients for Hungarian Mushroom Soup

3/4 c raw cashews
1/2 c water
1 lemon
2 tbsp olive oil
1 medium onion, minced
20 oz cremini mushrooms, chopped
2 c vegetable broth
1 tbsp dill
2 tbsp paprika

Recipe Directions for Hungarian Mushroom Soup

  1. Make the sour cream by combining the cashews, water, and juice from 1/2 a lemon in a blender or food processor. Puree until smooth.

  2. Heat the oil in a skillet over medium heat. Add the onion and saute until translucent, 3 to 5 minutes. Add the mushrooms and cook until they begin to brown and give off their liquid, 8 to 10 minutes.

  3. Combine the sauteed vegetables, broth, remaining lemon juice, salt and pepper to taste, dill, and paprika in the slow cooker. Cook on low for 6 to 8 hours.

  4. Add the sour cream and stir to combine. Adjust the seasonings to taste.
