Recipe Ingredients for Hungarian Hot Sausage Soup

2 tbsp Olive Oil
12 oz Lean Turkey Italian Sausage
6 cloves Garlic
2 large Onions
2 cup, diced Mushrooms, Portabella
2 cup Shredded Carrots
1 medium (2-1/4" to 3-1/4" dia.) Potatoes
14 1/2 oz Tomatoes
4 cup, chopped Kale
6 cup Chicken Stock
15 oz White Kidney Cannellini Beans or lentils
1 tbsp Paprika
1 3/5 grams Thyme, Fresh

Recipe Directions for Hungarian Hot Sausage Soup

  1. Brown mushrooms until nicely caramelized; set aside in a medium bowl. Brown onions in same skillet as you cooked mushrooms, scraping up browned bits as moisture is released from the onions. Sprinkle with salt (helps draw out moisture) and cook until nicely caramelized. Add to reserved mushrooms. Add carrots to same bowl.

  2. Heat a medium soup pot over medium high heat. Add extra-virgin olive oil, then add sausage to pot and brown and crumble it. Add garlic and cook a few minutes.

  3. Add lentils*, potato, bay leaf, sweet and smoked paprika (or substitute mixture), and herbs (leaves will fall from stems as soup cooks). Add tomatoes and broth and cover pot then raise heat to high and bring to a boil. Uncover pot and place heat back a bit but keep soup at a good rolling simmer. Cook 15 minutes until lentils and potatoes are tender.

  4. Remove herb stems and bay leaf and turn off heat. Wilt greens in the hot soup in small batches.

  5. Season with salt and ample fresh ground black pepper to taste.

  6. Let stand 5 minutes. Serve in shallow bowls with bread and butter.

  7. * If using uncooked lentils add at this stage. If using canned beans or cooked lentils don?t add until you add the onions, mushrooms, and carrots.
