Recipe Ingredients for Hungarian Goulash with Pork Tenderloin

1 tbs olive oil
1 tbs flour
2 lbs pork tenderloin, cut in cubes
1 c onion, sliced
1 c green pepper, sliced
1 c mushrooms, sliced
1 clove garlic, chopped
1/2 c ketchup
1/4 c tomato sauce, low salt
2 tbs worcestershire sauce, low sodium
1 tbs brown sugar
1 tsp salt
2 tsp paprika
1/2 tsp dry mustard
1 dash cayenne pepper
1 1/2 c water

Recipe Directions for Hungarian Goulash with Pork Tenderloin

  1. Put flour into ziplock bag and add beef. Shake to cover beef. In a dutch oven pan, on medium high heat, brown stew beef in olive oil in batches, being careful not to crowd the pan.

  2. When finished return beef to pan and add vegetables (onion, pepper, mushrom), stir fry for a couple of minutes until veg are softened.

  3. Stir in remaining ingredients, scraping up brown bits from bottom of pan. Turn heat to simmer. Cover tightly.

  4. Simmer covered for 2 to 2 1/2 hours until meat is tender. If desired, remove cover for last 30 minutes to thicken sauce.

  5. Can be served immediately over whole wheat pasta, rice or egg noodles or spaghetti squash

  6. Can be frozen.
