Hearty meal soup. Great on a cold winter's night.

Recipe Ingredients for Hungarian Cabbage Soup

1 1/4 lbs ground turkey
1/2 head cabbage
3 celery stalks
3 carrots
1 1/2 onions
4 cloves garlic
4 tbsp olive oil
1 1/2 tbsp turmeric
1 tsp salt
1 tsp pepper
24 oz diced tomatoes
8 cups chicken broth
1/2 cup long grain rice

Recipe Directions for Hungarian Cabbage Soup

  1. Mix turkey meat with turmeric, salt, and pepper.

  2. Form into tiny meatballs and quicly cook in olive oil.

  3. Saute onion, celery, carrots in olive oil until soft.

  4. Add garlic and saute until fragrant.

  5. Add tomatoes and broth.

  6. Stir in shredded cabbage and rice.

  7. Cover and simmer for minimum of 30 minutes.

  8. This soup is great to make ahead and keeps well in the refrigerator. The taste improves over time.
