This is a simplified version of Barb Hranilovich's cabbage rolls. Instead of rolls I make meatballs with the meat mixture and put cabbage wedges in the pot. Be aware that the Calorie Count estimate of calories is too low because it calculates based on lean beef and pork. But it's still great! I serve over mashed potatoes.

Recipe Ingredients for Hungarian Cabbage Rolls ("Sarma") Simplified

1 head cabbage
1 med. onion
1 pound ground beef
1 pound ground pork
1/2 c. raw rice
2 eggs
1 tsp. paprika
1 tsp. black pepper
2 tsp. salt
27 ounces canned sauerkraut
28 ounce canned whole tomatoes
3 tbsp. butter
2 tbsp. flour
1 tbsp. paprika

Recipe Directions for Hungarian Cabbage Rolls ("Sarma") Simplified

  1. Cut cabbage in wedges.

  2. Combine next 7 ingreds. (onion, meat, rice, eggs, 1 t. paprika, 1 t. pepper and 2 t. salt) and form into meatballs, about 1 1/4" in diameter.

  3. Put can/jar of sauerkraut in bottom of heavy pan.

  4. Arrange meatballs and cabbage wedges over sauerkraut.

  5. Crush tomatoes a bit by hand, then pour over cabbage, meatballs, and sauerkraut.

  6. Add the two bay leaves to the pot.

  7. Add water (or tomato juice or a combination) to cover (or nearly - use your judgement depending on your pot).

  8. Simmer one hour. Take off heat.

  9. Make a roux of 3T. butter, 2T. flour, and 1T paprika. Add to pot to thicken broth - work it through till evenly dispersed.

  10. Bring to a boil again, cook 15 minutes.

  11. This gets better and better as it simmers on the stove. I usually reduce the heat way down and let it sit at a very low simmer for as long as I can.

  12. Serve over mashed potatoes - I also set out a dish of sour cream on the table.
