Feeds a crowd... but way too high in sodium. The recipe can be doubled, or tripled, for a really big crowd. This recipe takes a long time to assemble... but pretty much worth the effort.

Recipe Ingredients for Hungarian Cabbage Rolls

1 1/2 lbs cabbage
1 1/2 lbs. ground beef
1 1/2 lbs. ground pork
2 cups barley, prepared, rinsed and drained
1 large onion, chopped
2 eggs
2 tablespoons garlic, chopped
1 tablespoon seasoned salt
1 teaspoon pepper
16 oz tomato sauce
16 oz sauerkraut
5 oz tomato paste

Recipe Directions for Hungarian Cabbage Rolls

  1. Wilt the cabbage in salted boiling water and set aside.

  2. Comine the next 9 ingredients until evenly blended. Prepare roaster by placing a layer of tomato suace and smaller unusable extra cabbage leaves. Stuff and roll larger cabbage leaves, placing seam side down in the roaster. After the first layer of stuffed cabbages is completed, completely cover the layer with tomato sauce and a thin layer of sauerkraut. Start next layer of stuffed cabbages. Repeat the sauce and sauerkraut. Continue until meat mixture and cabbage are used up... or your roaster is full. For the top lay, before placing in the over, cover with a thin layer of sauerkraut and daub on the contents of one small can of tomato paste, using daubs about a teaspoon in size. Cover and place in the oven at 350 degrees for about two hours.
