Irit's humus, based on a recipe by Ruth Sirkis in "From the Kitchen with Love."

Recipe Ingredients for Humus

1 cup Garbanzos
1 lemon yields Lemon Juice
2 clove Garlic
0.25 tsp Salt, Table
0.5 tsp Pepper, Black
8 tbsp Sesame Butter, Tahini, Type Of Kernels Unspecified
1 tbsp Olive Oil
1 tsp Paprika
10 sprigs Parsley

Recipe Directions for Humus

  1. In a large pot, soak 1 cup garbanzo beans in water overnight (the beans will swell).

  2. Drain the beans and cover with clean warm water.

  3. Cook for 1.5 hours or until the beans soften.

  4. Drain the water and grind the beans in a meat grinder or food processor (for a smoother texture, grind twice).

  5. Add 3 tablespoons lemon juice or so, 2 crushed garlic cloves, 1/4 teaspoon salt, 1/2 teaspoon pepper, and 1/2 cup (8 tablespoons) sesame butter/tahini. Mix thoroughly.

  6. Taste the mixture and adjust ingredients at will (lemon juice, salt, olive oil, garlic, etc..; variations are endless).

  7. For individual servings, spread on a saucer and pour a dab of olive oil or tahnini in the center.

  8. Garnish with parsley or paprika (or not), green olives, or any kind of pickled vegetables.

  9. You can double or triple the recipe, and freeze portions of the tahini and humus (separately).
