A delicious hummus that can be used in place of egg yolk for deviled eggs or as a dip from crudites or low-carb crackers.

Recipe Ingredients for Hummus with Yellow Bell Pepper

2 roasted garlic cloves
1 roasted yellow bell pepper, skinned
19 oz chick-peas, drained and rinsed
1/3 cup tahini
2 tbsp fresh lemon juice
2 tbsp olive oil
1 serving Extra Spicy Salt-Free Seasoning Blend

Recipe Directions for Hummus with Yellow Bell Pepper

  1. Roast yellow pepper and then skin the pepper prior to processing.

  2. In a food processor purée the chick-peas with the roasted garlic, roasted bell pepper, tahini, lemon juice, 1-2 TBSP of the olive oil,

  3. and 1/2 cup water, scraping down the sides, until the hummus is smooth

  4. and add sea salt to taste. I add in the extra spicy salt-free seasoning for an extra kick.

  5. Add water, if necessary, to thin the hummus to the desired consistency and transfer the hummus to a bowl.

  6. The hummus may be made 3 days in advance and kept covered and chilled.
