Hummus and Veggie Wraps Recipe

Makes 4 servings



Quick and easy meal. Great for using up leftover veggies. Can also be used with store-bought humus, cream cheese, or tapenade. Lavash or pita can be used in place of tortillas.

Recipe Ingredients for Hummus and Veggie Wraps

4 whole wheat tortillas (large or burrito size)
1 green pepper, sliced
1 tomato, sliced
2 cups alfalfa sprouts
1 c canned garbanzo beans, rinsed and drained
1/2 c plain yogurt
1 t minced garlic
1 T lemon juice
1 t cumin

Recipe Directions for Hummus and Veggie Wraps

  1. Hummus Directions:

  2. Puree in blender all ingredients for hummus.

  3. Refrigerate until ready to use.

  4. Assembly:

  5. Spread hummus on tortilla.

  6. Layer sliced veggies.

  7. Roll up & eat!
