I get bored with lunches to bring to work. This is a filling, easy little sandwich. I build it at work - just bring the ingredients in - so it doesn't get soggy.

2 slice Sprouted Wheat Multi Grain Bread
0.25 cup slices Cucumber
1 cup Spinach
20 grams Onion Red
1.5 tbsp Hummus
