Hummus with Tahini Recipe

Makes 6 servings



Hummus with tahini. I used the juice of one lemon. The cumin seeds can be toasted first, ground cumin can be substituted.

Recipe Ingredients for Hummus with tahini

2 cups dried chickpeas
6 cloves garlic
1/2 teaspoon sea salt
1/4 cup lemon juice
3 tablespoons tahini
1 teaspoon cumin seeds
1 cup water

Recipe Directions for Hummus with tahini

  1. Soak and boil chickpeas. Reserve cooking water.

  2. When tender, transfer to food processor or container for immersion blender. Add remaining ingredients, starting with about one cup of the reserved cooking water. Blend.

  3. Add more water as needed to reach desired consistency. Keep in mind that the hummus will thicken as it cools.

  4. Serve immediately or cover and keep in the fridge.
