Recipe Ingredients for HUMMUS

3 cups garbanzo beans
2 tbsp tahini
3/4 cup lemon juice
4 cloves garlic
1 tsp sea salt
1 cup olive oil

Recipe Directions for HUMMUS

  1. soak a pound (equal to 3 cups) garbanzo beans overnight, then drain and rinse.

  2. cook the beans in fresh pure water until tender (40-60 minutes). drain the beans, reserving the cooking water, and cool slightly.

  3. combine the beans, tahini, lemon juice, garlic, sea salt and just enough (1/2 cup up to a cup) of the reserved water in a food processor until smooth.

  4. pour the olive oil through the chute while processing.

  5. pulse any herbs in the mix (tomatoes, red pepper, basil, parsley, oregano, dill, or cilantro).
