A tasty hummus that can be served with vegetables, pita bread, etc. This hummus has a powerful garlic taste; the garlic can be reduced if desired.

Recipe Ingredients for Hummus

15 ounce garbanzo beans, drained with juice reserved
2 tbsp tahini
4 cloves garlic, minced
3 1/2 tbsp olive oil
2 tbsp lemon juice
1 tsp salt
1/4 tsp pepper
1 tsp parsley, chopped

Recipe Directions for Hummus

  1. Combine beans, 3 tbsp olive oil, lemon juice, garlic and tahini in a food processor or blender and blend for 3 minutes, occasionally pushing sides down with a spatula or knife.

  2. Add salt and pepper and blend until smooth. If mixture is too dry, add some of reserved garbanzo bean juice.

  3. Transfer to serving bowl and drizzle with remaining oil and sprinkle with parsley as desired.

  4. Store leftovers covered in refrigerator. Refresh older hummus with a sprinkling of fresh lemon juice.
