Hummus - use as a spread or serve with pita

Recipe Ingredients for Hummus

15 ounces organic canned garbanzo beans
1/4 medium tomato, diced
1/8 cup peanuts, crushed
1/8 cup extra virgin olive oil
1/8 cup garlic powder
1/4 cup lemon juice

Recipe Directions for Hummus

  1. Rinse garbanzo beans well and combine with other ingredients in a blender.

  2. Blend well so it forms a smooth and creamy consistency.

  3. Add chopped parsley as a garnish.

  4. Refrigerate leftover, lasts approximately 1-2 weeks.

  5. Makes about 20, 2 Tbsp, servings.
