Hummes recipe from Delia Smith's 'Complete Cookery Course'.

Recipe Ingredients for Hummus

8 oz cooked chickpeas
1/4 pt tahini
4 tbsp extra virgin olive oil
2 cloves of garlic
150 ml water
1 tbsp lemon juice
1 tsp salt

Recipe Directions for Hummus

  1. Puree all ingredients in a food processor, add more liquid if necessary to get correct consistency (like thick mayonnaise).

  2. Season with salt and pepper.

  3. Serve with Cayenne pepper and olive oil dribbled over.
