I can't take full credit for this recipe. It is an adaptation of the hummus recipe found in my Joy of Cooking cookbook. Most supermarkets sell tahini these days, in the peanut butter aisle.

Recipe Ingredients for Hummus

2 cups canned chickpeas
1/3 cup lemon juice
3 tbsp tahini
2 cloves garlic, finely minced
1 salt to taste
1 tbsp olive oil
1 pinch paprika
1 tbsp fresh parsley, finely chopped

Recipe Directions for Hummus

  1. Drain chickpeas, reserving liquid

  2. Place lemon juice, tahini, minced garlic, and salt in a blender or food processor and process briefly, enough to make a thick liquid.*

  3. Add chickpeas to the mixture. Process until the consistency of smooth mashed potatoes, adding reserved liquid as necessary.

  4. Scoop hummus into a serving bowl. Top with the olive oil. Sprinkle on paprika and finally, fresh parsley.

  5. Cover and chill at least one hour, then serve with pita bread or chips.

  6. *To make Egyptian hummus, add 1/2 tsp ground cumin in Step One.
