Taken from Bob's Red Mill Hummus Recipe

Recipe Ingredients for Hummus

3/4 c chickpea flour
2 1/2 c water
2 garlic cloves, minced
1/4 c vegetable broth
1/4 c peanut butter
1/4 c lemon juice
1/2 tsp cumin, ground
1/2 tsp cayenne
1/4 c olive oil
1 tsp salt
2 tsp pepper

Recipe Directions for Hummus

  1. Bring water to boiling on med high heat. Whisk the flour inot the boiling water. cook 1 minute stirring constantly. Turn heat down to med low and continue cooking for 5 min. Let cool. In the bowl of a food processor, puree flour and water mixture, garlic broth, peanut butter, lemon juice until smooth. Add cumin and cayenne, salt and pepper then pour Olive oil slowly through the feed tube while the machine is on.

  2. If mixture is too stiff, add more broth to get the desired consistency. Spoon and scrape the mixture into a bowl, cover with plastic wrap and let sit at room temp for at least an hour or longer. Taste to see if more lemon, salt or pepper is needed.

  3. *** I find about mid week this gets sort of dry in the fridge even if it's in an air tight container. So about mid-week toss it back into the food processor and take it for a few more spins with some broth.
