Hummus - Raw Recipe

This is a yummy raw-food alternative to the traditional hummus. I like to spread it on a piece of Ezekiel Bread or eat with carrots.

Recipe Ingredients for Hummus - Raw

2 c chickpeas
1/4 c lemon juice
1 T tahini
2 cloves garlic
1/2 t salt
2 T olive oil
1/4 c water

Recipe Directions for Hummus - Raw

  1. soak chickpeas until at least double in size

  2. (I soak for 2 days changing the water twice per day - remove any broken/split beans first)

  3. for softer/smoother hummus - freeze the soaked beans in 2 cup batches

  4. add 2 cups of soaked/drained beans to very strong blender

  5. add remaining ingredients

  6. if not blending smooth, add additional water 1 T at a time, just enough to get the blender contents to keep moving
