Hummus-Deviled Eggs Recipe

Just like deviled eggs, but with hummus instead. I'm cooking low salt, so these will taste better if you want to add some.

Recipe Ingredients for Hummus-deviled eggs

24 hard boiled egg white
16 oz chick peas
1 tbsp mustard
2 tbsp lemon juice
1/3 cup tahini
1 tsp paprika

Recipe Directions for Hummus-deviled eggs

  1. Hard boil a dozen eggs.

  2. Add Chick peas, tahini, the juice of 1 lemon, and mustard into a food processor or blender. Blend, add warm water by the tbsp as needed until it reaches the consistancy of traditional deviled egg mixture. Feel free to add seasonings/more lemon juice/more mustard/vinegar to taste. Experimentation is encouraged!

  3. Refrigerate mixture while you peel the eggs.

  4. Slice eggs in half, discarding the yellow portion.

  5. Fill egg halves with mixture.

  6. Dust with Paprika

  7. Keep refrigerated
