sometimes compared to a carrot cake, but subsituting bananas for the carrots. I left out the cream cheese frosting. Yes, that makes me sad, but the calories were just too much. So I added in some powdered sugar to dust over the cake.

Recipe Ingredients for Hummingbird Cake

3 cups all-purpose flour
1/2 cup splenda blend
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 cups vegetable oil
1 cup apple sauce
3 eggs
8 ounce crushed pineapple with juice
2 cups diced bananas
3/4 cup chopped pecans
1 teaspoon vanilla extract
2 tbsp powdered sugar

Recipe Directions for Hummingbird Cake

  1. combine dry ingredients in bowl (except the powdered sugar!).

  2. combine wet ingredients in another bowl.

  3. Add wet to dry ingredients.

  4. Pour into a greased (pam) bundt pan. Bake at 350 for 70 min.

  5. *alternatively, you could put the pecans in the bottom of the bundt pan prior to pouring the batter in. This would help if you have a family or friend who doesn't like nuts. They can just cut off the top :)
