Recipe Ingredients for Hummingbird Cake

3 cups flour
2 cups sugar
1 tsp baking soda
1 tsp salt
3 eggs, beaten
1 cup canola oil
1 1/2 tsp vanilla extract
11 ounces pineapple, crushed
1 1/4 cups pecans, chopped
2 1/4 cups bananas, chopped

Recipe Directions for Hummingbird Cake

  1. Combine first 5 ingredients in a large mixing bowl; add eggs and oil, stirring until dry ingredients are moistened. Do not beat.

  2. Stir in banilla, pineapple, pecans and bananas.

  3. spoon batter into greased muffin tins or 3 greased 9 - inch cake pans.

  4. Bake at 350 degrees for 25 to 30 minutes or until a wooden ppick inserted in center comes out clean.

  5. Cool in pans for 10 minutes, remove from pans and cool completely.
