Recipe Ingredients for Huggys Eggplant Parmesian

1 tsp onion powder
1 tsp garlic powder
1 tsp paprika
1/4 tsp black pepper
1/2 cup bread crumbs
2 large eggplant
4 tsp olive oil
1 1/2 cup mozzarella, shredded

Recipe Directions for Huggys Eggplant Parmesian

  1. Mix spices and bread crumbs together.

  2. Peel eggplant and slice in 1/4 inch slices (any larger and it might not be soft enough). Put 1 tsp of olive oil on the bottom of a cookie sheet (I used a stone cookie sheet). Place 1/4 of the eggplant on sheet, flip slices (to get a small coat of oil on both sides). Sprinkle 1/8 cup of crumb mixture over slices. Broil till golden. Repeat 3 more times.

  3. In 9x13 pan, place 1 1/2 cup sauce, Layer 1/3 eggplant, 1 1/2 cup sauce, 1/2 cup cheese, until done.

  4. Bake in 350 oven for 30 min.
