This is a terrific, easy meal to serve anytime of the day.

Recipe Ingredients for Huevos Rancheros

1/4 cup vegetable oil
5 oz corn tortillas
1 tbsp margarine
4 large eggs
1/4 cup prepared salsa or picante sauce
2 tbsp catsup
1/2 cup fat-free cheddar cheese, preshredded
2 tbsp green onions, sliced or cilantro, chopped (optional)

Recipe Directions for Huevos Rancheros

  1. Heat oil in a 10" skillet over medium-high heat until hot but not smoking. Fry tortillas in oil until lightly browned and crisp, about 1 minute per side. Transfer to paper towels to drain

  2. Pour off oil and melt margarine in same skillet over medium heat. Fry eggs in margarine sunny-side up or over easy, as desired. Place 2 eggs on each tortilla. Combine salsa and catsup in the same skillet and heat over high heat until hot. Pout over eggs and sprinkle with cheese. Sprinkle with onions, if desired.
