a quick way to make cornbread on the stove top

Recipe Ingredients for hot water cornbread

1 cup cornmeal
1/4 cup soy flour
1/4 cup flour
1/8 cup sugar
1 tsp baking powder
1/2 tsp salt
3 tbsp olive oil

Recipe Directions for hot water cornbread

  1. mix all of the ingredients in a bowl and set to the side.

  2. heat 2 and 1/2 cups of water to boil in medium size pot.

  3. remove pot from heat and add cornmeal mixture to pot, stirring to ensure that its evenly mixed and to remove any lumps.

  4. heat up a heavy skillet to med-high heat and add a little olive oil.

  5. spoon the cornmeal mixture into the skillet forming small palm size patties which are about 1/2 inch thick. you should be able to cook three or four at a time. add more oil as necessary.

  6. cook for 3 mins on each side, or until the cornmeal pattie is golden brown.
