An easy healthy chinese soup without the meat.

Recipe Ingredients for Hot and Sour Tofu soup

1 1/2 quarts water
15 mushrooms, sliced thinly
1 cup cabbage, slice thinly
16 oz. tofu, sliced
1 cup waterchestnuts, sliced
1 cup bamboo shoots, matchsticks
2 tbsp. soy sauce
1/2 tsp. ground pepper
2 tsp. hot sauce
2 tbsp. white vinegar
2 garlic cloves, chopped
5 green onions, chopped

Recipe Directions for Hot and Sour Tofu soup

  1. Heat water to boiling.

  2. Add all other ingredients except scallions. Reheat to boiling and then immediately lower the heat to a simmer. Simmer for about 15 to 20 minutes.

  3. Add the scallions when the soup has about 5 minutes left to cook.

  4. Taste the soup and add more hot sauce, vinegar or soy sauce if desired.
