Thai hot and sour soup features lemon grass added to the shrimp, noodles and vegetables in a savory yet spicy broth.

Recipe Ingredients for Hot and Sour Thai Soup

2 1/2 pounds small shrimp, peeled, butterflied and deveined
2 ounces rice noodles (rice vermicelli), thin
8 cups fish or chicken broth
1 stalk, lemon grass
1/4 cup Thai fish sauce
2 tbs chili oil
1 tbs lemon juice
1 tbs lime juice
2 tbs of lime zest
1/2 chili pepper, pickles
2 tsp salt
2 tsp ground pepper
1/3 cup canned straw mushrooms
1/4 cup chopped fresh cilantro

Recipe Directions for Hot and Sour Thai Soup

  1. Prepare shrimp, devein and butterfly

  2. Boil shrimp, three minute, rinse with cold water to stop from cooking

  3. Boil noodles in the same water, three minutes, rinse with cold water to stop from cooking

  4. Combine the broth with the lemon grass, fish sauce, chili oil, lemon juice, lime juice, lime zest and pickled chili in a soup pot. Bring to a simmer for 10 minutes. Use tongs to remove lemon grass. Taste and season with salt and pepper.

  5. Distribute the rice noodles, shrimp, mushrooms and cilantro among heated bowls. Pour the broth over and serve
