Recipe Ingredients for Hot & Sour Stir-fry (adapted)

10 oz green beans
2 tomatoes
10 oz broccoli slaw
1 tbsp ginger root, grated
1 1/2 tsp sugar
4 tbsp soy sauce
2 tbsp cider vinegar
1 tsp cornstarch
1 tbsp vegetable oil

Recipe Directions for Hot & Sour Stir-fry (adapted)

  1. Have everything prepared and close at hand before you begin to stir-fry. Trim the green beans and cut them in half. Cut the tomatoes into chunks. In a small bowl, combine the ginger, sugar, chili paste (opt.), soy sauce, and vinegar, and then stir in the cornstarch and 1 tbsp water.

  2. Heat the oil in a wok or large skillet. Add the green beans and stir-fry on high heat for a couple of minutes. Add the coleslaw mix and continue to stir-fry for 2-3 min. Add the tomatoes and stir-fry until they soften, 2-3 min. Add the soy sauce-cornstarch mix and stir-fry for 1-2 min, until the sauce thickens and coats the vegetables.

  3. Serve on rice, topped with Easy Baked Tofu (http://caloriecount.about.com/easy-baked-tofu-recipe-r301916).
