Homemade hot & sour soup from Epicurious

Recipe Ingredients for Hot & Sour Soup

4 cups chicken broth
1 1/2 oz dried shiitake mushrooms
5 tbsp rice vinegar
2 tbsp cornstarch
1 1/2 tbsp sesame oil
3 tbsp minced fresh ginger
350 g firm tofu
1 chicken breast
1 tbsp low sodium soy sauce
1/2 tsp dried crushed red pepper
1 pinch of sugar

Recipe Directions for Hot & Sour Soup

  1. Combine broth and mushrooms and soak for 20-30 min. Keep broth; remove stems from mushrooms and slice. Combine vinegar and cornstarch; set aside.

  2. Saute ginger in oil. Pour in broth and bring to boil. Add tofu, noodles, soy sauce, red pepper, chicken, sugar and mushrooms. Siimmer on medium-low for 5 min. Add cornstarch mixture and stir 1 min until slightly thickened.
