Nice light version of Hot and Sour soup.

Recipe Ingredients for Hot and Sour Soup

2 cans (14.5 ounces) chicken broth
4 ounces fresh shiitake mushroom caps, thinly sliced
1/2 cup sliced bamboo shoots, cut into thin strips
3 tablespoons rice wine vinegar
2 tablespoons soy sauce
1 1/2 teaspoons chili paste
2 teaspoons dark sesame oil
2 tablespoons cornstarch
2 tablespoons cold water

Recipe Directions for Hot and Sour Soup

  1. Combine chicken broth, mushrooms, bamboo shoots, vinegar, soy sauce and chili paste in pan and simmer for 30 minutes. Stir in sesame oil. Blend cornstarch and water until smooth and stir into soup bring to boil stirring constantly until thickened.

  2. Garnish w/ sliced green onions and mung bean sprouts if desired.
