A vegan take on a Chinese classic

Recipe Ingredients for Hot and Sour Soup

34 oz vegetable broth
1/2 cup shitake mushroom
1/4 cup bamboo shoot
1/2 cup enoki mushroom
1 cup bean sprouts
1/2 cup green onion
1 tbsp chili sauce
1/4 cup rice vinegar
1 tbsp soy sauce
1/2 tsp dark sesame oil
1 tbsp corn starch

Recipe Directions for Hot and Sour Soup

  1. Boil vegetable broth

  2. Break apart dehydrated shitake mushrooms and add to soup

  3. Add bamboo shoots, enoki mushrooms, chili sauce, rice vinegar, soy sauce, and sesame oil

  4. Add bean sprouts

  5. Mix 1 tbsp corn starch with 1 cup of cold water

  6. Pour into soup

  7. Keep heat on high for a few minutes and allow the soup to thicken

  8. Add green onion

  9. Eat!
