Hot and Sour Soup Recipe

Hot chili oil is found in the Oriental section of large supermarkets by the Oriental sesame oil. If unavailable, substitute 1 tsp vegetable oil plus 1/2 tsp dried hot red pepper flakes.

Recipe Ingredients for Hot and Sour Soup

24 oz chicken broth
2 tbsp distilled vinegar
2 tbsp soy sauce
1 tsp chili oil, hot
1/4 tsp ground white pepper
9 oz firm or extra firm tofu
4 oz canned bamboo shoots, drained
15 oz straw mushrooms, drained
2 green onions
3 tbsp water
2 tbsp cornstarch
1 large egg white
1 1/2 tsp oriental sesame oil

Recipe Directions for Hot and Sour Soup

  1. Combine broth, vinegar, soy sauce, chili oil, and white pepper in a large sauce pan. Cover and bring to a boil over high heat

  2. Drain tofu, cut into 1/2" thick cubes, and stir into soup. Reduce heat and simmer for 5 minutes

  3. Cut bamboo shoots in half lengthwise. Stir bamboo shoots and mushrooms into soup. Continue to simmer for 5 minutes

  4. While soup is simmering, thinly slice green onions on the diagonal and set aside. Combine water and cornstarch, mixing until smooth, and stir into soup

  5. Cook, uncovered, for 2 minutes or until thickened, stirring frequently

  6. Beat egg white in a small bowl. Slowly pour egg white into soup in a thin stream while stirring constantly in one direction. Stir in reserved green onions and sesame oil

  7. Yields 6 cups of soup. Serve alone or with chow mein noodles
