Recipe Ingredients for Hot & Sour Soup - Homemade

15 g dried shiitake mushrooms
6 oz (170 g) uncooked lean pork
1/4 small red pepper
8 green onions
1 carrot
1/2 cup bamboo shoots, sliced, julienned
6 oz firm tofu
2 quarts low sodium chicken stock
3 tbsp low sodium soy sauce
2 tbsp chinese chili sauce
2 tsp chili oil
2 tbsp grated ginger
6 tbsp water
3 tbsp Corn Starch
3 tbsp vinegar
1 tsp sesame oil
2 eggs

Recipe Directions for Hot & Sour Soup - Homemade

  1. Place mushrooms in bowl and cover with boiling water. Let stand 30 minutes. Drain. Remove and discard stems. Cut caps into thin slices.

  2. Cut pork into "match-stick" thin strips. Mince carrot very small cubes. Remove seeds from pepper and cut pepper into thin strips. Chop onions finely. Cut tofu into 1/4-inch cubes.

  3. Combine chicken stock, soy sauce, ginger, chili oil and chili sauce in 5-quart dutch oven. Cook over medium heat until soup boils. Reduce heat and simmer uncovered 5 minutes.

  4. Add mushrooms, pork, pepper and bamboo shoots. Simmer uncovered 5 minutes. Add slurry of cornstarch and 5 Tbsp. water, let come to boil.

  5. Stir vinegar and oil into soup. Beat egg and remaining 1 Tbsp. water together with fork. Gradually drizzle egg into soup while stirring soup vigorously. Add onions and tofu. Cook 1-2 minutes until done.
