You can use already cooked shrimp in this. The Hot Sour sauce is made up of the chicken broth, Chili paste, sugar, soy sauce and the 1 T cornstarch. Use Saki or dry sherry for the wine.

Recipe Ingredients for Hot & SOur Shrimp Lo Mein

1 lb shrimp
1 T wine
1 t cornstarch
8 oz egg noodles
1 sweet red pepper
6 oz snow peas
1 c carrots
3 T ginger root
3/4 c chicken broth
1 t chili paste
1 T sugar
2 T soy sauce
1 T cornstarch
4 T peanut oil

Recipe Directions for Hot & SOur Shrimp Lo Mein

  1. Rinse the shrimp under warm running water. Cut in half lengthwise if desired. Add the rice wine or sherry and cornstarch. Marinate the shrimp for 15 minutes.

  2. Fill a large pot of water with 1 quart of water and 1 teaspoon salt. Bring to a boil. Add the noodles, stirring to separate the strands. Cook the noodles until they are cooked "al dente" - tender but still a bit chewy in the middle. Drain the noodles, run under cold water, and drain again. Toss with 1 tablespoon sesame oil.

  3. Cut the red bell pepper in half, remove the seeds and cut into 1-inch strips. Blanch the snow peas and carrots briefly in boiling water until they turn a bright color. Submerge in ice cold water, remove and drain thoroughly. Mince the ginger.

  4. In a small bowl or measuring cup, mix together sauce ingredients and set aside.

  5. Heat a wok over medium-high to high heat. Add 2 tablespoons oil. When the oil is hot, add the ginger and stir-fry until aromatic (about 30 seconds). Add the shrimp. Stir-fry until they turn pink. Remove from the wok.

  6. Heat 2 tablespoons oil. When the oil is hot, add the carrots. Stir-fry for a minute, then add the snow peas. Stir-fry for another minute, then add the red bell peppers.

  7. Push the vegetables up to the side of the wok. Add the sauce in the middle. Heat to boiling, then add the noodles and shrimp. Mix everything together. Heat through and serve hot.
