Really awesome and tasty way to cook Chinese eggplant.

Recipe Ingredients for Hot and Sour Chinese Eggplant

1 average eggplant Chinese Eggplant
1 tbsp Soy Sauce
1 tbsp Vinegar, Cider
1 tbsp Pepper, Red Or Cayenne
1 tbsp Asian Chili Oil
1.5 tbsp Vegetable Oil, Canola
3 tsp Sugars, Granulated
0.333 tbsp Corn Starch

Recipe Directions for Hot and Sour Chinese Eggplant

Chop eggplant in 1 to 2 inch cubes. Place in large bowl and cover with water and add some salt. Let soak for 30 minutes. In the meantime, mix all other ingredients except vegetable oil in a small bowl and set aside. After 30 minutes, rinse and thoroughly dry eggplant. Add to a hot skillet with vegetable oil and brown/cook for 10 minutes on medium-high heat. Add sauce and cook until sauce thickens. Serve immediately.
