Cold lettuce and hot quinoa, kale and tomatoes

Recipe Ingredients for Hot Salad

1 cup quinoa
4 cups lettuce
8 cherry tomatoes, halved
4 cups kale
1/2 tablespoon olive oil
1/4 teaspoon salt
1 1/2 cups (1 12 oz can) chick peas
1/4 cup shallot
3 cloves garlic
1/2 teaspoon red pepper flakes

Recipe Directions for Hot Salad

  1. Make quinoa per package directions.

  2. Place lettuce in bowl.

  3. Stir fry the remaining ingredients.

  4. Pour hot quinoa and kale mixture over lettuce.
