Hot Pasta Salad Recipe

A light but rich-flavored pasta dish that can be served warm or eaten cold the next day. May be used as a main course or side dish.

Recipe Ingredients for Hot Pasta Salad

1 box Whole Grain Penne
4 pan fried slices Hickory Smoked Bacon
5 cups Baby Spinach
4 cup chopped raw Sliced Baby Bella Mushrooms Packaged
3 medium raw Tomato Roma
1 clove Garlic
2 oz Pine Nuts
4 tbsp Freshly Shredded Parmesan Cheese
4 fl oz Wine, Table, White

Recipe Directions for Hot Pasta Salad

  1. Boil entire box of pasta al dente according to package directions (approx 9 min) and drain

  2. Sautee the bacon to crispy and allow to drain on paper towels

  3. Reserve approximately 2 T of bacon grease

  4. Wilt the spinach in the bacon grease, set aside in large mixing bowl

  5. Toast pine nuts in excess bacon fat, add olive oil if desired and to spinach

  6. Sautee garlic and cremini mushrooms and add to mixing bowl

  7. Sautee tomatoes until tender, add to mixing bowl

  8. Deglaze pan with white wine, add butter & juice of 1/2 a lemon, and reduce to a medium-thick sauce

  9. Add pasta and sauce to mixing bowl and toss

  10. Garnish with shaved or shredded parmesan cheese and black olives
