Recipe Ingredients for Hot Mess Lentils

2 cups lentils
1 cup kale
1 cup cabbage
1/4 cup carrots
1/2 onion
1 cup diced tomato
2 cloves garlic
4 T balsamic vinegar
2 T crumbled feta cheese
1 t olive oil

Recipe Directions for Hot Mess Lentils

  1. Heat the oil in a pan on medium heat. If you have a non-stick pan go ahead and skip adding the oil.

  2. Dice the onion. Add to the hot oil and saute until transparent.

  3. Julienne or shred the cabbage and carrots. If you don't have a lot of prep time a bag of coleslaw mix can be used. Add to the pan and cook for a few minutes, until the carrots begin to soften a bit.

  4. Chop the kale. Add to the pan and saute about 5 minutes, until it just starts to wilt. Add the diced tomato and garlic and cook for a few minutes.

  5. Add the lentils. If using canned lentils drain and rinse the lentils before adding them to the vegetable mix. Add the balsamic vinegar and some water (about 1/4- 1/2 cup). Turn the heat up to high until the liquid begins to boil. Leave it on high for about a minute then turn down to medium low.

  6. Simmer for 5-10 minutes, until the liquid is reduced and the carrots are soft. Top with the crumbled feta and serve.
