Slightly spicey, but always a hit. It's one of those things no one can stop eating. The left overs also work great as quesadillas.

Recipe Ingredients for Hot Crab & Corn Dip

8 oz. cream cheese, room temperature
1 cup mayonnaise
1 tbsp olive oil
1/3 cup chopped onion
2 tsp garlic, minced
1/4 cup jalapeno, finely diced, about 2 peppers
1/4 cup red pepper, finely diced
1 cup corn, frozen
16 oz. crab
3/4 cup cheese, monteray jack
1/4 cup cilantro, chopped
1 salt
1 pepper

Recipe Directions for Hot Crab & Corn Dip

  1. Pre-heat oven to 375 degrees F.

  2. In a medium mixing bowl, blend together cream cheese and mayonnaise until smooth.

  3. In a pan, saute the onions and garlic in olive oil at medium heat. Let cook through, stirring only occasionally so the onions get some color, about 4 minutes. Add in the jalapeno, continuing to saute for 2 minutes. Add in the red pepper and corn, and stir until warmed through, about 2 minutes.

  4. Stir in vegetable mixture until well incorporated. Add in remaining ingredients, being sure not to over mix, so the crab isn't too broken up. Add salt and pepper to taste. Place mixture into a glass pie plate. Bake, uncovered, for 15-18 minutes, until heated through and lightly browned.

  5. Serve with vegetables and crackers, rye chips, or French bread.
