Wonderful for lunch served with tomato soup

Recipe Ingredients for Hot Chicken Salad

1/2 cup light mayonnaise
3 tbs fresh lemon juice
1/2 cup minced onion
1/4 cup finely minced celery
3 oz cheddar cheese, grated
8 oz. chicken breast, roasted and chopped
1/4 cup sliced almonds

Recipe Directions for Hot Chicken Salad

  1. Divide cheese in half. Combine all ingredients, half of the cheese and turn into casserole dish. Top with remaining cheese and crushed chips.

  2. Bake 375F for 20-30 minutes or until bubbly and cheese is melted.
