Meat loaf with a kick. Can reduce sodium by eliminating ketchup or using reduced-sodium ketchup that analyzer won't recognize.

Recipe Ingredients for Horseradish Meat Loaf

4 slices whole wheat bread, crumbled
1/4 c. fat-free milk
1/2 c. celery, finely chopped
1/4 c. onion, finely chopped
1/4 c. prepared horseradish
2 T. Dijon mustard
2 T. chili sauce
1 egg, lightly beaten
1 1/2 t. reduced-sodium Worcestershire sauce
1/4 t. pepper
1 1/2 lb. lean ground beef
1/2 c. ketchup

Recipe Directions for Horseradish Meat Loaf

  1. In a large bowl, soak bread in milk 5 min. Drain and discard milk. Stir in next 8 ingredients. Crumble beef over mixture and mix well.

  2. Shape into a loaf in an 11x7 sprayed baking dish. Spread top with ketchup. Bake at 350 for 45-55 min.
