Our variation of the classic dish

Recipe Ingredients for Hoppin' John

1 tbsp vegetable oil
12 oz Sainsburys Basics Beef & Pork Mince
1/2 tsp chilli powder
125 g onion, chopped
300 g carrots, thinly sliced
1 green pepper, chopped
8 oz rice
2 tsp dried mixed herbs
1 serving Sainsburys Basics Chopped Tomatoes
2 1/4 pints water
3 vegetable stock cubes
400 g kidney beans
400 g Beans
2 oz Creamed Coconut Block, grated

Recipe Directions for Hoppin' John

  1. Fry the onion and the mince until the onion is soft and the mince is browned.

  2. Add the chilli powder, carrots and pepper and fry for 5-10 minutes.

  3. Stir in the rice until coated with oil. Add the tomatoes, stock and herbs.

  4. Bring to the blil and simmer for 10 minutes

  5. Add the beans and extra stock or water if needed. Cover and cook for 5 minutes.

  6. Stir in the creamed coconut until melted. Remove from heat and serve.
