Recipe Ingredients for Hoppin' John

21 slices cooked center cut bacon
2 tablespoons olive oil
2 teaspoons onion powder
8 ounces frozen corn
30 ounces black eyed peas (2 15-oz cans), rinsed and drained
18 1/2 ounces chicken broth
5 1 tsp sea salt
5 1 tsp black pepper
1 cup long grain white rice
2 tsp garlic powder

Recipe Directions for Hoppin' John

  1. Heat olive oil in a large saucepan over medium. Add red bell pepper (and garlic). Saute about 5 minutes.

  2. Stir in black-eyed peas, broth, salt, and pepper. Reduce heat to low, cook 10 more minutes. Stir in parsley.

  3. Serve on top of cooked rice (and garnish with cheese). Add hot sauce if desired.
