Recipe Ingredients for Hoppin' John

1 tbsp Olive Oil
1 medium (2-1/2" dia) Onions
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
2 clove Garlic
30 oz Black Eyed Peas, Organic
0.25 cup (8 fl oz) Water
0.5 tbsp Chili Powder
1 tbsp Parsley, Dried

Recipe Directions for Hoppin' John

  1. Heat olive oil in a large saucepan over medium heat. Add onion, red bell pepper, and garlic. Saute until onions are translucent, about 5 minutes.

  2. Stir in drained and rinsed black-eyed peas, water, chili powder, and parsley. Reduce heat to low. Cook 10 minutes.
