Recipe Ingredients for hoppin john

1 tablespoon olive oil
1 onion
1 red bell pepper
2 garlic clove
30 ounces dried black-eyed peas
1/4 cup low sodium vegetable broth
1 teaspoon salt
1/2 teaspoon black pepper
2 green onions
1/4 cup parsley
6 cups brown rice
1 cup white cheddar cheese
1 tbsp hot sauce

Recipe Directions for hoppin john

  1. heat olive oil in large saucepan over medium

  2. add onion, red bell pepper, and garlid

  3. saute ntil onions are translucent, about 5 minutes

  4. stir in black-eyed peas, broth, salt and pepper

  5. reduce heat to low, cook 10 more minutes

  6. stir in green onions and parlsey

  7. serve on top of cooked rice and garnish with cheese

  8. add hot sauce, if desired.
