Recipe Ingredients for Hoppin' John

1 lbs. Black Eyed Peas, rinsed, drained and picked over
1 tbs. Vegetable oil
2 medium Onions, Chopped
2 stalks Celery, Chopped
2 Garlic Cloves, minced
5 cups Water
2 2/3 cups Beef Broth, double strength
1 tsp. Hot Red Pepper, crushed
1 tsp. Thyme, dried
1/2 tsp. Basil, dried
1/2 tsp. Oregano, dried
1 lbs. Pork Sausage
1 tsp. Salt
4 cups Rice, cooked

Recipe Directions for Hoppin' John

  1. In large pot soak black eyed peas overnight.

  2. In large pot heat oil over medium high heat. Add the onions and celery and cook, stirring often, until the onions are softened about 4 minutes. Add the garlic and stir for 1 minute. Stir the cooked vegetables into the black eyed peas. Add the water, beef broth, crushed red pepper, thyme, basil, and oregano. Cover and slow cook until peas are tender, 7 to 8 hours on low (200 *F).

  3. Meanwhile, in a large skillet over medium heat, cook the country sausage, stirring often to break up the lumps until cooked through, about 8 minutes. Drain off the fat.

  4. Stir the salt into the black eyed peas, stir in the cooked sausage, and serve immediately, spooned over a bowl of hot rice.
