Black-eyed beans with rice and veg

Recipe Ingredients for Hoppin' John (July 20, 2008)

1 1/4 tsp. paprika
3/4 tsp. black pepper
1/2 tsp. garlic powder
1/4 tsp. onion powder
1/4 tsp. basil
1/4 tsp. thyme
1 tbsp. olive oil
2 cups onion, diced
1 small red pepper, diced
3 cups water
125 g ham, diced
1/4 cup brown rice
1/4 cup wild rice
2 cups cooked black-eyed peas
4 cups kale, trimmed and chopped

Recipe Directions for Hoppin' John (July 20, 2008)

  1. Soaked 1 cup dried black-eyed beans in water for about 5 hours then drained and rinsed.

  2. Combined spices in a jar and shook well.

  3. Heated olive oil in large saucepan over medium heat.

  4. Added 2 tsp. of the spice mix, a bay leaf, the onion and red pepper to oil. Cooked for about 10 minutes, until soft.

  5. Added water, ham (actually smoked pork loin chop - lower in sodium than ham) and beans. Brought to a boil and cooked for about 1 hour, until beans were cooked.

  6. Added rice (actually Lundberg Wild Blend) and remaining spice mix. Covered and let simmer for about 30 minutes, until rice was cooked.

  7. Added kale, turned up heat to medium and cooked for 5 minutes.
