Makes 18 servings



Hearty healthy stoup. Original recipe calls for plain smoked sausage and a package of boil-in-bag rice. If you use the boil-in-bag rice add 20 minutes before serving and turn slow cooker up to high. Cook on low 6 hours. Makes 18 cups.

Recipe Ingredients for Hoppin' John Chowder

63 1/5 oz black-eyed peas, undrained
20 oz rotel tomatoes
14 oz beef broth
1 lb turkey sausage, sliced and quartered
1 c water
1 onion, finely chopped
1 green bell pepper, chopped
1/2 t garlic powder
3 c cooked brown rice

Recipe Directions for Hoppin' John Chowder

  1. Combine all ingredients except rice in slow cooker. Cook on low for 6 hours. Add rice and heat til warm all the way thru.

  2. NOTE: I make extra rice a meal before and save it. Add to cooker about 20 - 30 minutes before serving.
