Recipe Ingredients for Hoppin' John 2008

1/2 cup smoked ham
1 cup dried blackeyed peas
1/2 large green pepper
1/2 medium yellow onion
1/4 tsp. black pepper
1/4 tsp. cayenne pepper (1 small--substitute japapeno)
2 cloves garlic

Recipe Directions for Hoppin' John 2008

  1. Soak peas overnight, pull out hulls and drain.

  2. Start boiling water, shred ham into pot.

  3. Grind about 1/4 tsp. black pepper into pot.

  4. Chop up pepper (don't be too diligent about seeding) and onion, dump into pot.

  5. Boil almost to mush, adding water as needed.

  6. Seed and chop the hot pepper into very small pieces, and set aside.

  7. Chop garlic coarsely and add to pot.

  8. Serve over rice (rice calories not added), with the hot pepper sprinkled over it and black pepper and paprika to taste.
