Recipe Ingredients for Honey Tea Loaf

225 g raisins
300 ml English Breakfast Tea
75 g honey
2 medium eggs
100 g whole wheat flour
175 g all purpose flour
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1/4 teaspoon cinnamon
1 tablespoon baking powder

Recipe Directions for Honey Tea Loaf

  1. Place the raisins in a large bowl. Brew a strong cup of tea and stir in the honey. Pour the tea over the raisins and leave to stand for at least two hours.

  2. Preheat the oven to 180C/350F and grease a small loaf tin.

  3. Lightly beat the eggs and add them to the raisin mixture.

  4. Fold through all the dry ingredients and pour into the loaf tin.

  5. Bake for 1 hour - 1 1/4 hours until the cake is firm to the touch and a skewer comes out clean. Transfer to a wire rack to cool.
